I know this video is a little outdated but, at least on my opinion, you only should build at attack if you have a good attacking to call attention to them and not to yourself (aggro). Most of the time I'm playing in a not very organized team (everyone divides and goes alone or no freaking medic on the team) or I'm playing against good players that always pay attention to everything surrounding them...

Uber heavy are not hard to defend.
All you have to do is keep the distance of encounter point and dont knocking your sentry like a idot. You just have to fix your sentry when it's damaged pretty bad.
If you meet a uber demo.. run your little ass.
